Instructions

    Preheat the oven to 350°F (180°C).

    In an electric mixer bowl, cream plant butter (0.5 cup), white granulated sugar (0.5 cup) and light brown sugar (0.25 cup) together very well for a couple of minutes. Add smooth peanut butter (0.5 cup) and vanilla extract (1 teaspoon) and mix in well.

    In a separate bowl, mix all purpose flour (0.75 cups), rolled oats (1 cup), baking powder (0.5 teaspoon), baking soda (0.5 teaspoon) and salt (0.5 teaspoon) together. Add these dry ingredients to the wet mixture and mix with a spoon (do not use the electric mixer for this part).

    The cookie dough should be fairly wet. Use a cookie scoop to scoop out roughly tbsp (2) sized balls of dough onto a parchment-lined baking tray. Aim for about 20 cookies.

    Flatten the cookies with a fork.

    Bake for 12-15 minutes until lightly browned on top. The cookies will be very soft in the middle.

    Allow them to cool directly on the tray so they can firm up before moving them.
