
Peach Pluot Gyoza
These delightful vegan gyoza dumplings feature a sweet surprise filling of tender peaches and juicy pluots. Easy to prepare, they make for a light and fruity dessert or a unique afternoon snack. The fruit filling is gently cooked with agave nectar, a hint of cinnamon, and a touch of wine, then encased in delicate vegan wrappers and steamed until perfectly tender.

Put the peach (1) and plum (1) into a microwavable bowl and add the agave (1 tsp), cornstarch (0.5 tsp), cinnamon (0.125 tsp), pinot grigio (0.5 tbsp), and lemon juice (0.5 tsp). Microwave for 2 minutes, stirring after one minute.

Set a steamer basket over water that comes just below the bottom of the basket. If using a metal steamer, spray it lightly with [oil spray].

Take out one [gyoza wrappers] at a time, keeping the rest covered with a damp cloth. Place about [1-2 tsp fruit filling] on the wrapper. Brush the edges with [water], then fold one edge over the fruit.

Press the edges together to seal, starting from the bottom (close to the fold) to keep the juices from running out. Stand the gyoza up on its fold, press it down slightly to form a flat base, and crimp the edges a little to form ruffles. (If using wonton wrappers, form a triangle and you may not achieve the same ruffled effect.) Place in the steamer and repeat with the other wrappers.

Bring the water to a boil, and steam for about 7 minutes. Remove from the steamer and keep in a covered container, as they dry out quickly.
