
Orange Veggie Bao Buns
These soft vegan steamed buns are filled with a vibrant orange-infused vegetable stir-fry. The tangy citrus notes perfectly complement the savory vegetables, offering a delicious and light meal. Great for a fun meal or appetizer.

Mince the garlic (2 cloves) and ginger (1 tbsp). Cube the firm tofu (1 cup). Slice the sliced carrots (0.5 cup), sliced bok choy (0.5 cup), and sliced mushrooms (0.5 cup).

Heat sesame oil (1 tbsp) in a large pan or wok over medium-high heat. Add the minced [garlic] and [ginger] and stir-fry for 1 minute until fragrant.

Add the cubed [tofu], [carrots], [bok choy], and [mushrooms] to the pan. Stir-fry for minutes (10), or until vegetables are tender-crisp.

In a small bowl, whisk together the low sodium soy sauce (4 tbsp), orange juice (2 tbsp), orange zest (1 tsp), salt (0.25 tsp), and black pepper (0.125 tsp). Pour the sauce over the vegetables and tofu, tossing to coat. Cook for 2-3 minutes, allowing the sauce to thicken slightly.

Steam the buns (6 bao) according to package instructions until soft and warm.

Carefully open each steamed [bao bun] and fill with a generous amount of the orange veggie stir-fry. Serve immediately.
