
Melon Tangerine Salad

Prepare the honeydew (1) by quartering, removing seeds and skin, then slicing into finger-length pieces. Peel and thinly slice tangerines (4). Extract seeds from pomegranates (2).

Juice limes (2) and tangerines (2). Mix together in a small bowl and stir in sugar (1 tbsp) until dissolved.

Arrange the sliced fruit on a large platter or in a bowl. Pour the juice mixture over the fruit and scatter over some torn mint (1 handful). Serve immediately.
