Lemon Mug Cake

In a small bowl, combine the almond flour (1 tbsp), coconut flour (1.5 tbsp), sugar (1 tbsp), and baking powder (0.5 tsp), and mix well.

In a separate small bowl, combine the plant milk (2 tbsp) with the ground flaxseed (1 tbsp) and water (3 tbsp) (to make flax egg) and whisk with the lemon extract (0.75 tsp). Add this wet mixture to the dry ingredients and mix until just combined.

Grease a large mug or deep bowl and pour the batter in it. Microwave for 50 seconds to 1 minute, or until a toothpick inserted comes out clean. Start 1m timer

While the cake cools, make the glaze by mixing the powdered sugar (2 tbsp), vanilla extract (0.06 tsp), and plant milk (1 tsp) to a desired consistency. Drizzle over the lemon cake.
