
Holiday Wild Rice

Dice the onion (1 cup), celery (1 cup), and cremini mushrooms (8 oz). Add to the instant pot.

Sauté the vegetables on low using [1-2 tbsp water] or [1-2 tbsp vegetable broth] until softened.

Stir in the garlic (2 cloves), rubbed sage (2 tsp), rosemary (0.5 tsp), thyme (0.25 tsp), and black pepper (0.25 tsp). Simmer until fragrant.

Turn off Sauté mode.

Add the soy sauce (2 tbsp), vegetable broth (2 cups), and wild rice (2 cups) (rinsed). Stir to combine.

Attach the lid, set the vent valve to SEALING, and cook on MANUAL, High Pressure for minutes (25).

Allow to naturally vent for at least minutes (10). Then release any remaining pressure and remove the lid.

Stir in the dried cranberries (0.5 cup), chopped walnuts (0.25 cup), and balsamic vinegar (2 tbsp). Fluff with a fork and serve.
