
Gluten-Free Vegan Banana Muffins

Preheat oven to 350 degrees F (176 C) and line a muffin tin with 8 paper liners.

In a large bowl, prepare flax eggs (2 batches) by mixing flaxseed + water and letting rest for a few minutes.

Next, add ripe bananas (2 medium) and mash. Add agave nectar or maple syrup (3 tbsp), baking powder (1 tsp), pure vanilla extract (1 tsp), unsweetened vanilla or plain almond milk (3 tbsp) and stir.

Add almond meal (1 cup) and oat flour (0.67 cup) and stir once more. Taste and adjust sweetener if preferred.

Bake for [30-40 minutes] or until a toothpick inserted into the center comes out clean and they appear golden brown.

Remove and let rest in pan for minutes (5). Then cool completely on a cooling rack (they are better after cooling overnight).
