Place the [raw cashews], lemon juice (1.5 tbsp), and salt (1 tsp) into the bowl of a food processor.

Blend until smooth, stopping to scrape down the sides of the bowl as needed. Add water (1 tbsp) or water (2 tbsp) to thin the mixture as needed.

Taste test and add additional [salt] and/or [lemon juice] if you like.

If using, add any desired stir-ins (such as chives, roasted garlic, veggies, strawberries, sun-dried tomatoes, or roasted red peppers) to the food processor and pulse until finely chopped and well blended.
