
Easy Gluten-Free Falafel
This falafel recipe is easy, gluten-free, and naturally vegan. It's packed with fresh herbs and flavor, and you can prepare it in the oven, on the stovetop, or with an air fryer for a crispy exterior and fluffy interior.

Preheat your oven to 400F if baking. Place the chickpeas (16 oz), roughly chopped yellow onion (1 small), and garlic (2 cloves) into a large food processor. Process until the mixture is finely chopped, but not mushy.

Next, add the fresh parsley (0.5 bunch), fresh cilantro (0.25 bunch), cumin (1 tbsp), cayenne pepper (0.25 tsp), and juice (0.5 lemon). Process again until well incorporated; the mixture should turn a bright green.

Finally, add the chickpea flour (0.25 cup) and tahini (2 tbsp) to the food processor, and pulse until well combined.

Transfer the [falafel mixture] to a large bowl, and use your hands to form round balls using approximately falafel mixture (2 tbsp) per ball.

Choose your cooking method:Oven: Bake at [400f] for minutes (18), flip, then bake for another [15-18 minutes].Air Fryer: (Recommended) Bake at [350f] for minutes (20). For extra crispy falafel, spray the balls with some [oil spray] or nonstick [cooking spray] before baking.Stovetop: Add heat-safe oil (1 tbsp) to the pan for every balls (5 falafel). Pan-fry over medium heat, rotating the balls every minutes (2) to brown all sides. This process usually takes about minutes (20).

Serve as desired. The falafel will dry out slightly in the fridge but will keep well in a sealed container for up to days (5).
