
Creamy Vegan Eggnog
This indulgent festive beverage is rich, sweet, and perfectly spiced. By combining soaked cashews and full-fat coconut milk with a blend of warming spices, this plant-based nog delivers the luxurious texture of the classic holiday drink without the dairy or eggs. Soak raw cashews (1 cup) in boiling water for 60 minutes. Drain and rinse well.

Combine soaked cashews in a blender with full-fat coconut milk (1 can), oat milk (1.5 cup), coconut sugar (6 tbsp), ground cinnamon (1 tsp), ground nutmeg (1 tsp), ground cloves (0.25 tsp), cardamom powder (0.25 tsp), pure vanilla extract (0.5 tsp), and sea salt (1 pinch). Blend on high until perfectly smooth.

Transfer the mixture to a saucepan and heat over medium for 5 minutes until warm, or chill in the refrigerator to serve cold.
