
Creamy Microwave Hummus
This exceptionally creamy hummus is prepared in just five minutes using a simple microwave technique. By heating chickpeas in their own liquid with whole garlic cloves, the flavors meld into a rich and savory spread. Finished with fresh lemon and nutty tahini, it's a velvety and flavorful dip that rivals any restaurant version.

Place the undrained chickpeas (1 can) and peeled garlic cloves (4 clove) into a microwave-safe mixing bowl and heat on high for 4-5 minutes.

Drain the chickpeas into a separate container, reserving the hot liquid. Transfer the warm chickpeas and garlic into a food processor or high-speed blender.

Add tahini (0.5 cup), lemon juice (2 tbsp), and sea salt (0.75 tsp) to the processor. Pour in half of the reserved chickpea liquid and begin blending.

While mixing, slowly stream in extra virgin olive oil (2 tbsp). Process until the hummus is completely smooth and creamy, adding more of the reserved liquid to reach your desired consistency.

Taste and adjust seasoning if necessary. Serve warm or chilled, garnished with paprika (1 pinch) and additional olive oil.
