
Creamy Mashed Potatoes
These simple 5-ingredient mashed potatoes are fluffy, creamy, and buttery. Loaded with garlic and chives, they are perfect on their own, with gravy, or a generous dollop of vegan butter. A wholesome and addictive side dish.

Peel or halve the yukon gold potatoes (6 medium) and place them in a large saucepan. Cover with [water to cover] by ~1 inch.

Bring to a light boil over high heat. Add sea salt (1 tsp) and cook for minutes (25) to minutes (30) until very tender. They should effortlessly slide off a knife when pierced.

While potatoes cook, chop the fresh chives (0.25 cup) (optional) and measure the vegan buttery spread (3 tbsp).

Once tender, drain the [yukon gold potatoes] and return them to the hot pot off the heat for minute (1) to evaporate excess water.

Mash the [yukon gold potatoes] using a potato masher until fluffy.

Add the vegan buttery spread (3 tbsp), garlic (5 cloves), sea salt (0.5 tsp), and ground black pepper (0.5 tsp), then stir to combine. Taste and adjust seasonings as needed.

Top with [fresh chives] (optional), stir, and serve as is or with your favorite gravy. Leftovers will keep in the fridge for up to a few days. Not freezer friendly.
