In a small bowl, stir together the tahini (0.5 cup), lemon juice (0.25 cup), water (6 tbsp), garlic clove (1 small), and sea salt (0.5 tsp). Season to taste. If you find the tahini sauce too bitter, add maple syrup (0.25 tsp) or maple syrup (0.5 tsp) to balance the flavor. If it’s too sharp, add extra-virgin olive oil (0.5 tsp) to extra-virgin olive oil (1 tsp) to mellow the flavor. If it's too thick, add water, as needed, to reach your desired consistency.
