
Creamy Homemade Tzatziki
This tangy and refreshing vegan tzatziki brightens up any meal with its creamy texture and garlicky, bright lemon flavour. Easy to make, it's perfect as a dip or drizzled over falafel, gyros, and vegetables.

Place the grated cucumbers (0.5 cup) on a towel and wrap the towel around it. Squeeze out all the excess liquid that you can.

In a bowl, mix the squeezed grated cucumbers (0.5 cup) with the plant based greek yogurt (1 cup), sea salt (0.5 tsp), ground black pepper (0.25 tsp), olive oil (1 tbsp), lemon juice (1 tbsp) and garlic (2 cloves). Stir together until thoroughly combined. Let the mix set together for at least 30 minutes in the fridge for the flavours to meld together, then serve with some pita chips and veggies. Enjoy!
