
Creamy Gnocchi with Garlic Kale
Soft fluffy pillows of gnocchi and tender, sautéed kale, tossed in a creamy, garlic-infused sauce. This Creamy Vegan Gnocchi with Garlic & Kale is dinner party worthy but incredibly easy to make, taking less than 15 minutes from start to finish and that includes prep time too!

Have all ingredients and equipment ready as the recipe comes together quickly.

Bring a large pan of salted water to a boil for the [gnocchi].

Remove thick stems from [lacinato kale] leaves, discard stems, and chop leafy parts into bite-sized pieces.

Warm the olive oil (1 tbsp) in a large sauté pan. Add the garlic (6 cloves) and cook over medium heat, stirring constantly for minutes (2). Add lacinato kale (1 bunch) and freshly ground [black pepper], then sauté for another minutes (5), stirring frequently. Add a sprinkle of [chili flakes] if desired.

While the [lacinato kale] cooks, blend the cashew pieces (0.5 cup) with salt (0.25 tsp) and water (0.25 cup) until completely smooth.

After about minutes (3) of the [lacinato kale] sautéing (when it's almost tender), add the 500g package gnocchi (1 x) to the boiling water. Separate each piece of [gnocchi] before adding. Have a slotted spoon ready.

As soon as the [gnocchi] float (after about 2 minutes (1 to)), use a slotted spoon to remove and add them to the pan with the [lacinato kale] and [garlic].

Spoon the creamy cashew sauce into the pan and stir to combine everything. Add a little of the gnocchi cooking water to thin as needed. Add more seasoning if desired.

Serve immediately, garnished with [vegan parmesan cheese] if desired.
