Melt the plant butter (0.25 cup) in a large skillet or pot over medium-high heat.

When [plant butter] begins to sizzle, add the garlic (1 bulb) (minced) and sauté, stirring frequently for about minutes (2). Do not burn!

Stir in vegetable broth (4 cups), can coconut milk (16 oz), salt (1 teaspoon) and black pepper (1 teaspoon). Combine well.

Add the fettuccine (1 lb) and stir together.

Bring to a boil; reduce heat and simmer, stirring often, until [fettuccine] is cooked through. It will take roughly [20-22 minutes].

Once done, stir in vegan parmesan (0.5 cup) and [chopped fresh parsley].

Add a splash more [dairy free milk] if the sauce is too thick for you.

Adjust [salt] and [black pepper] to taste.
