
Creamy Doritos Pasta
This quick weeknight pasta features tender penne and blanched broccoli coated in a rich, homemade 'Doritos' flavored cream sauce. Made with cashews and a custom spice blend, it's topped with seasoned breadcrumbs for an extra layer of crunch and savory flavor. A delicious and satisfying vegan meal.

Mix the doritos spice mix (made from nutritional yeast (1.25 tbsp), onion flakes (2 tsp), garlic powder (0.75 tsp), cayenne (0.5 tsp), paprika (1 tsp), salt (1 pinch), kala namak (1 pinch)) or blend in grinder to get a well blended mix. Taste test and adjust.

Cook the penne (1.75 cup) per instructions. Blanch the broccoli florets (1.5 cup) (cook 3-4 minutes in boiling water, then rinse in cold water).

Blend the raw cashews (0.33 cup) with enough water (0.33 cup) to make a smooth cream.

Add lemon juice (1 tsp), salt (0.25 tsp) to taste and half of the Doritos spice mix to the cashew cream.

You can just toss the penne (1.75 cup) and broccoli florets (1.5 cup) and serve at this point. I usually like to heat everything a bit so the spice taste comes out more and cashew cream doesnt taste raw.

In a pan, add evoo (2 tsp), heat on medium.

Add the broccoli florets (1.5 cup) and toss for a few seconds.

Add the penne (1.75 cup) and the cashew cream. Mix well. Cover and let it start to bubble on low heat. (1-2 minutes).

Taste test and adjust spices and salt (0.25 tsp) and take off heat.

Mix some of the Doritos spice with breadcrumbs (1.75 tbsp) or crumbs of toasted Oats and rice flakes.

Sprinkle the crumbs on hot penne (1.75 cup) right before serving!
