Creamy Corn Butter
This creamy corn butter offers a delightful, fat-free alternative to traditional butter. It boasts a smooth, spreadable texture perfect for toast, muffins, or as a savory condiment. Easy to prepare and bursting with subtle flavor, it's a game-changer for plant-based diets.
Instructions
- 1
Drain liquid from sweet corn (2 cans) (if using canned) and add the drained corn directly to your blender. If using frozen corn (16 oz), add the thawed corn instead.
- 2
Add water (2 tbsp), lemon juice (1 tbsp), salt (0.5 tsp), and garlic powder (0.25 tsp). Blend until smooth and creamy. If using frozen corn, you may need to add an additional water (1 tbsp) or water (2 tbsp). For a more 'garlic butter' taste, use garlic (2 cloves), freshly minced, instead of garlic powder.
- 3
Scrape the mixture into a small pan and simmer on low heat for minutes (10) until slightly thickened.
