Instructions

    Bring a large pot of salted water to a boil. Add the cauliflower florets (12 ounces) and boil until fork tender, 8 to 10 minutes. Drain and place the cauliflower in a blender. Add the vegan parmesan (0.5 cup), extra-virgin olive oil (0.25 cup), garlic cloves (2 clove), dijon mustard (0.5 tsp), plant butter (3 tbsp), fresh lemon juice (2 tbsp), sea salt (1 tsp), and several grinds of [freshly ground black pepper].

    Add reserved pasta cooking water (1 cup) to the blender and blend the sauce until creamy.

    As you toss your alfredo sauce with pasta, you may want to add the additional reserved pasta cooking water (0.5 cup) to loosen the sauce.
