Soak raw cashews (1.25 cup) in very hot water for 20 minutes. Then drain and add to a high-speed blender.

To the blender, add arrowroot starch (1 tbsp) (optional), nutritional yeast (3.5 tbsp), garlic (2.5 clove), sea salt (0.5 tsp), vegan parmesan (1.5 tbsp), and plant milk (1.5 cup).

Blend on high until creamy and smooth, scraping down sides as needed. Taste and adjust flavor as desired, adding more [garlic], [nutritional yeast], [vegan parmesan], [sea salt], or [plant milk] if too thick.

Transfer to a rimmed skillet and cook over medium-low to medium heat for 5 minutes, whisking frequently. The sauce should thicken and bubble. Add up to plant milk (1 cup) more as needed to thin.
