
Creamy Banana Nice Cream
This simple and refreshing vegan dessert is made entirely from fruit. Creamy frozen bananas are blitzed until they reach a velvety, soft-serve consistency. Topped with vibrant mixed berries and crunchy pistachios, this healthy ice cream alternative is perfect for a guilt-free summer treat without any added sugar or dairy.

Peel and chop the bananas (4) into rough chunks or slices. Place in a freezer-proof container and freeze for at least 480 minutes or overnight.

Once solid, put the chunks in a food processor and blitz for 2 minutes. Add a few water (2 tbsp) to help the bananas break down until the mixture is creamy and mousse-like.

Serve immediately as soft-serve, or return to the freezer for 120 minutes for a scoopable texture. Garnish with mixed berries (1 handful) and pistachios (1 handful).
