In a tall container, combine aquafaba (3 tbsp), chickpeas (16 g), dijon mustard (2 tsp), lemon juice (1 tbsp), and garlic cloves (2 clove). Blend with an immersion blender at high speed for 2 minutes until smooth.

While blending at high speed, slowly drizzle in vegetable oil (0.5 cup) in a thin stream. Continue processing for 4 minutes until a thick, creamy emulsion forms.
