Instructions

  1. 1

Preheat your oven to 350 degrees and grease an 8x8-inch baking dish.

  2. 2

In a large bowl, mash ripe banana (1 medium) until smooth. Whisk in non dairy milk (2 cups), maple syrup (0.25 cup), and vanilla extract (1 tsp).

  3. 3

Mix in old-fashioned rolled oats (2.5 cups), baking powder (0.5 tsp), cinnamon (1 tsp), nutmeg (0.25 tsp), and salt (0.25 tsp). Pour the mixture into the baking dish.

  4. 4

To make the streusel, pulse whole pecans (0.5 cup) and old-fashioned rolled oats (0.25 cup) in a food processor until they reach a coarse meal consistency. Combine in a small bowl with brown sugar (0.33 cup), all purpose flour (1 tbsp), ground cinnamon (0.5 tsp), and coconut oil (4 tbsp) until the mixture looks like wet sand.

  5. 5

Sprinkle the streusel over the top and bake for 28-30 minutes until golden and firm. Allow to cool for 5 minutes before slicing into nine portions.
