In a large bowl, mash ripe banana (1 medium) until smooth. Whisk in non dairy milk (2 cups), maple syrup (0.25 cup), and vanilla extract (1 tsp).

Mix in old-fashioned rolled oats (2.5 cups), baking powder (0.5 tsp), cinnamon (1 tsp), nutmeg (0.25 tsp), and salt (0.25 tsp). Pour the mixture into the baking dish.

To make the streusel, pulse whole pecans (0.5 cup) and old-fashioned rolled oats (0.25 cup) in a food processor until they reach a coarse meal consistency. Combine in a small bowl with brown sugar (0.33 cup), all purpose flour (1 tbsp), ground cinnamon (0.5 tsp), and coconut oil (4 tbsp) until the mixture looks like wet sand.
