
Chipotle Lime Tofu Fajitas
These vibrant Sheet Pan Fajitas feature flavorful chipotle lime tofu and perfectly roasted vegetables, all prepared on a single sheet pan for an easy weeknight meal and minimal cleanup. Enjoy crispy tofu and tender vegetables with your favorite toppings.

Preheat oven to 400°F. Chop [vegetables] and press extra firm tofu (1 block).

Grease trays (2 baking) or line with [silicone mats].

In a large bowl, season yellow onion (1 Large), sliced, with [salt] and [black pepper]. Stir, then transfer to [baking trays].

Add caps (3 portobello), sliced, to the same bowl. Season with tamari (2 tsp), chili powder (0.5 tsp), and cumin (0.25 tsp). Mix well and place on [baking trays].

Add peppers (3 bell), sliced, to the same bowl. Season with remaining chili powder (1 tsp), cumin (0.5 tsp), [cayenne pepper] (if using), and salt (0.5 tsp). Mix and divide on [baking trays].

Rinse the bowl. Add [cubed extra firm tofu], juice (1 lime), nutritional yeast (1 tbsp), salt (0.5 tsp), and chipotle powder (0.5 tsp). Stir until [tofu] is well-coated. Add to [baking trays] with other [vegetables].

Bake for 30-35 minutes. After minutes (15), flip the [vegetables] and [tofu], and switch the [baking trays'] positions in the oven.

Remove from oven once [tofu] is crispy. Serve as desired. If using tortillas (9), heat them during the final few minutes of roasting.
