
Cherry Almond Brownies
Indulge in these deeply rich and decadent brownies, a perfect chocolate treat that is entirely plant-based. Featuring sweet glacé cherries and ground almonds for extra moisture, these fudgy squares are incredibly simple to bake and offer a classic combination of flavors that everyone will love.

Preheat oven to 170C. Grease and line a 20cm tin with parchment. Mix ground flaxseed (2 tbsp) with 6 tbsp [water] and set aside for 5 minutes.

In a saucepan, melt dark chocolate (120 g), coffee (0.5 tsp), and vegan margarine (80 g) with 60ml [water] over low heat. Cool slightly.

Combine self raising flour (125 g), almonds ground (70 g), cocoa powder (50 g), and baking powder (0.25 tsp). Whisk golden caster sugar (250 g) into the chocolate mixture until glossy. Stir in the flax mix, vanilla extract (1.5 tsp), cherries (70 g), and finally the flour. Bake for 35-45 minutes.
