
Carrot Cake Overnight Oats
Indulge in these healthy and delicately spiced overnight oats that taste just like carrot cake. Packed with fiber and flavor, this easy make-ahead breakfast combines rolled oats with grated carrots, sultanas, and crunchy nuts, topped with creamy coconut yogurt for a perfect morning treat.

Tip the rolled oats (80 g), desiccated coconut (1 tbsp), chia seeds (1 tbsp), sultanas (30 g), ground cinnamon (0.5 tsp), and mixed spice (0.25 tsp) into a mixing bowl.

Add the zest and juice of orange (0.5), maple syrup (1 tbsp), the grated carrot (1), and almond milk (250 ml). Give everything a good stir.
