Preheat the oven to 175°C. Line a standard loaf pan with parchment paper.

In a medium bowl, toss the blueberries (1.5 cups) with granulated sugar (1 tbsp) and all purpose flour (2 tbsp). Set aside.

In a large bowl, whisk together the remaining granulated sugar (0.33 cup), all purpose flour (1.5 cups), baking powder (2.5 tsp), and salt (0.5 tsp).

Add the plant-based milk (0.75 cup), neutral oil (0.25 cup), and unsweetened applesauce (1 pack). Stir until just combined; do not overmix.

Gently fold in the blueberry mixture, reserving about 0.25 cup of blueberries for topping.

Pour the batter into the prepared loaf pan and sprinkle the reserved blueberries on top.

Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. If not, bake for another 5 to 10 minutes.
