A perfected take on a classic Italian staple. This simple yet elegant pasta creates a rich, creamy emulsion using high-quality olive oil, fresh lemon juice, and starchy pasta water. It is a garlicky, herbaceous, and satisfying main that comes together in minutes.

Boil a pan of water, salt it generously, and add the spaghetti (500 g), cooking until al dente.

In a frying pan, heat the olive oil (6 tbsp). Add the finely sliced garlic cloves (8 clove) and chili flakes (2 tsp), stirring on a low heat to ensure the garlic does not burn.

Reserve a mug of the starchy pasta water (8 tbsp) and add it to the garlic pan along with a salt (1 pinch). Stir and lightly simmer to develop the sauce.

Drain the pasta and add it to the pan along with the parsley (100 g) and the juice from the lemon (1). Add more water if the pasta looks dry.

Toss everything together to create a creamy emulsion. Season with black pepper (1 pinch), garnish with extra parsley, and finish with a drizzle of olive oil.
