
Vegan Christmas Brownies
These festive vegan brownies offer a delightful chocolatey, fudgy experience with a seasonal twist. Infused with aromatic spices and sweet mincemeat, they are easy to make and can also be prepared gluten-free.

Preheat oven to 180c / 350f and line a [8x8 inch brownie tin] with baking paper.

Mix the gluten free flour (150 g), brown sugar (250 g), cocoa powder (100 g), cinnamon ground (0.5 tsp), mixed spice (0.5 tsp), baking powder (1 tsp), bicarbonate of soda (0.5 tsp) and salt (1 pinch) together in a large bowl.

Stir in the applesauce (120 ml), almond milk (80 ml), sunflower oil (60 ml) and vanilla extract (1 tsp) to make a smooth batter.

Fold in the dark chocolate chips (90 g) and mincemeat (3 tbsp).

Transfer the mixture to the baking tin and bake for 25-30 minutes.

Leave to cool completely before cutting into 16 squares. Enjoy!
