
Sheet Pan Vegan Cauliflower Fajitas
These vibrant and flavorful vegan cauliflower fajitas are an easy sheet pan meal, perfect for a quick weeknight dinner or a fun gathering. Marinated cauliflower and colorful bell peppers with onions are roasted to perfection, offering a delicious and healthy alternative to traditional fajitas. Enjoy them as is, in tortillas, or lettuce wraps, garnished with fresh cilantro and a squeeze of lime.

Bring a large pot of water to a boil. Preheat oven to 400°F (204°C). Cut all vegetables.

Boil cauliflower (1 head) for minutes (3). Drain well.

Combine chili powder (1 tbsp), paprika (2 tsp), onion powder (1 tsp), cumin (1 tsp), garlic powder (0.5 tsp), salt (1 tsp), black pepper (0.25 tsp), and red pepper flakes (0.25 tsp) in a small bowl.

On a tray, combine drained [cauliflower], bell pepper (1 red), bell pepper (1 green), bell pepper (1 yellow), and onion (1 yellow). Drizzle with olive oil (3 tbsp) and toss. Sprinkle the spice mix evenly and toss to coat.

Bake for minutes (18) or until tender.

Serve as is, over rice, in [taco shells] or [lettuce] wraps. Garnish with [cilantro], [lime juice] or [lemon juice].
