Blend all the ingredients together: the mild red chili peppers (450 g), garlic (5 clove), onion (1 bulb), brown sugar (3 tbsp), sea salt (1 tsp), apple cider vinegar (80 ml), and tomatoes (2). Add [water] as needed to achieve the desired consistency. If using dried chili peppers, you will need more liquid.

Bring the mixture to a boil, then reduce heat and let it simmer for about minutes (10). Let it cool completely.

Using a food processor, blend the cooled mixture until smooth. Transfer the sriracha to sterilized jars for longer storage or store it in the fridge for a few weeks.
