
Make-Ahead Freezer Burritos
These freezer-friendly burrito wraps are filled with hearty refried beans, juicy corn, and crunchy peppers. Having a stash ready makes packing breakfast or lunch on a busy day incredibly easy.

Preheat an oven to 3500F (1800C). In a small bowl, combine the veggie ground (1.5 cup) and mexican seasoning (2 tbsp).

Spread a heaping refried beans (0.33 cup) over half of a tortilla (1 white). Sprinkle veggie ground (0.25 cup) mix overtop of that.

Add the remaining ingredients: [red bell pepper], [green onions], [corn], [fresh cilantro], [black olives], and [pickled jalapenos] to the wraps.

Fold in each side of the tortilla (1 white), then roll, starting from the closest edge, until the wrap is closed. Place seam-side down on a baking tray. Repeat with the remaining wraps.

Bake in the oven for [7-10 minutes], or until the wraps are lightly golden. Optionally, if after minutes (10) they aren't yet golden, turn on the broiler and grill them for minute (1). Keep your eye on them so they don't burn.

Allow the wraps to cool to room temperature before freezing. When ready to enjoy, thaw, and serve with avocado slices and desired sauces. Enjoy!
