Instructions

    Place the gin (700 ml), golden caster sugar (150 g), ginger (100 g), whole cloves (8), cinnamon sticks (3), and nutmeg (0.5) into a large lidded container.

    Stir the mixture well, cover tightly, and leave to infuse for 4 days, ensuring you shake or stir the container daily.

    Strain the liquid through a muslin-lined sieve once it reaches your desired spiciness and the sugar is dissolved.

    Pour the spiced gin into sterilised bottles and serve as a festive liqueur or as a base for a cocktail.
