
Gingerbread Cinnamon Rolls
These delightful gingerbread cinnamon rolls, complete with a luscious cinnamon vegan butter cream cheese frosting, are the perfect holiday treat. Soft, fluffy, and bursting with festive spices, they're an ideal addition to your holiday breakfast or dessert table.

In a large bowl for a stand mixer, combine flour (3.5 cups), brown sugar (2 tbsp), instant yeast (1 packet), ground ginger (0.5 tsp) and salt (0.5 tsp).

Turn stand mixer onto low and add in the dairy free milk (0.75 cup), applesauce (0.5 cup) and vanilla extract (1 tsp).

Add in the vegan butter (6 tbsp) and let go for 5-7 minutes, adding in the remaining flour if needed to not be sticky and form a ball.

Once a ball is formed, grease the same bowl mixed in and place the dough ball back into the bowl.

Cover with a towel or plastic wrap and let sit for 60-90 minutes in a warm, draft-free place until doubled.

Once dough is doubled in size, pull out the dough and lay it out on a lightly floured surface.

Using a rolling pin, roll dough into an approximately 17x25 inch rectangle that is 0.25 inch thick.

For the filling - In a bowl, cream the vegan butter (0.5 cup). Then, add brown sugar (0.5 cup), cinnamon (2 tsp), ground ginger (1 tsp) and nutmeg (0.25 tsp).

Spread the filling mixture evenly over the dough.

Carefully roll cinnamon rolls into a log from the longest side up. Once completely rolled, place seam side down. Cut into 12 even-sized pieces.

Place into a greased 9x13 baking dish and cover to rise for 45-60 minutes or until cinnamon rolls are touching.

Preheat to 350 degrees F.

Once heated, place dish inside and bake in oven for 30-35 minutes.

While rolls are cooking, in a bowl beat together the vegan cream cheese (4 oz) and vegan butter (6 tbsp) well.

Add in powdered sugar (1 cup), cinnamon (0.5 tsp), and vanilla (1 tsp). Beat again.

Add in remaining powdered sugar and beat until well combined.

Remove rolls from oven and let cool for 10 minutes before topping with frosting.
