Instructions

    Grate the cucumber (0.25) using a box grater. Wrap the grated cucumber in paper towels or a clean kitchen towel and squeeze thoroughly to remove as much water as possible.

    In a bowl, combine the squeezed cucumber with non dairy yogurt (1 cup), garlic (1 clove), ginger (1 inch), fresh cilantro (0.25 cup), fresh mint leaves (0.25 cup), lime juice (0.5), ground cumin (0.5 tsp), garam masala (0.5 tsp), cayenne pepper (1 pinch), and kosher salt (0.25 tsp). Stir well and serve immediately or chill before serving.
