
Vegan Apple Cake

Preheat your oven to 180°C (360°F) and line an 8.5-inch cake pan with parchment paper.

In a mixing bowl, whisk together almond milk (1 cup), olive oil (0.25 cup), sugar (0.75 cup), vanilla extract (1 tbsp), and the zest of lemon (0.5).

Sift all purpose flour (2 cup), baking powder (1 tbsp), and salt (0.125 tsp) into the bowl. Mix briefly until you have a smooth, thick batter without over-mixing.

Fold in the small pieces of apples (2.5) with a spatula and pour the batter into the prepared pan.
