
Sugar-Free Banana Bread
This wholesome sugar-free banana bread is a moist and flavorful vegan treat, sweetened entirely with fruit. Featuring a vibrant raspberry chia jam swirl and crunchy walnuts, it's a healthy, gluten-free option perfect for family breakfasts or snacks.

Preheat your oven to 180°C and prepare an 8.5 x 4.5 inch loaf pan.

In a small bowl, mash the raspberries (125 g) and combine with chia seeds (1 tbsp) and water (1 tbsp). Mix well and set aside to thicken.

Place the ripe bananas (3 medium-sized), soft dates (120 g), soy milk (120 ml), and lemon juice (2 tbsp) in a blender and process until completely smooth.

In a large bowl, whisk together the oat flour (220 g), cinnamon (1 tsp), baking powder (2 tsp), baking soda (1 tsp), and salt (0.5 tsp).

Pour the wet blender mixture into the dry ingredients and stir until just combined. Fold in the walnuts (60 g).
