Instructions

    Prepare the celeriac (1 kg) by shaving off its ends and peeling the skin, removing any cracks. Chop it into slices, then into rough 1cm cubes.

    Heat a casserole pan over medium-high heat. Add olive oil (2 tbsp) and rip in the fresh lemon thyme (3 sprig). Stir in the diced celeriac (1 kg) and a generous sea salt (1 pinch).

    Reduce the heat to medium, cover, and cook for 20 to 25 minutes, stirring occasionally, until tender. The celeriac should lightly fry and steam in its own moisture.

    For a deeper colour, remove the lid and fry for an additional 4 minutes. Serve immediately, or save for later and reheat.
