
Pink Gin Fizz
An elegant and sparkling vegan cocktail that beautifully balances botanical gin with zesty lemon and the aromatic complexity of bitters. This pink-hued beverage is topped with crisp sparkling wine and fresh fruit, making it a perfect centerpiece for sophisticated celebrations and weekend gatherings.

In a large jug, combine the icing sugar (5 tbsp) and lemon juice (75 ml). Stir until the sugar has fully dissolved.

Add the gin (150 ml) and ice cubes (3 handful) to the jug. Stir vigorously for about 2 minutes until the mixture is exceptionally cold.

Strain the chilled syrup into 8 individual champagne flutes or coupe glasses, discarding the used ice.

Add angostura bitters (1 dash) to each glass to achieve a pink hue, then top each with bottle dry white sparkling wine (93.75 ml). Garnish with a few raspberries (0.12 handful) and serve immediately.
