
Nut Butter Chocolate Oatmeal Cookies

In a large mixing bowl, mash the banana (2) until smooth, then stir in the peanut butter (0.33 cup) and pure vanilla extract (0.5 tsp) until creamy.

Add the quick oats (1.5 cup), shredded unsweetened coconut (2 tbsp), dried cranberries (2 tbsp), and dark dairy free chocolate (0.71 oz) to the bowl and mix well.

Roll the mixture into 12 balls and place them on the tray. Press down to flatten them into cookie shapes as they will not spread during baking.
