Instructions

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

Heat olive oil (2 tbsp) in a large skillet over medium heat. Sauté onion (1), garlic cloves (4 clove), and mushrooms (16 oz) with salt (0.25 tsp), pepper (0.5 tsp), and italian herbs (2 tsp) until golden brown, about 12 minutes.

  3. 3

Add baby spinach (4 oz) and stir until wilted. Pour in vegetable broth (2 cup), marinara sauce (25 oz), and ziti (8 oz). Stir well to combine and bring to a light simmer.

  4. 4

Dot the surface with tofu ricotta (1 cup), then sprinkle with vegan mozzarella (1 cup) and vegan parmesan (0.5 cup). Cover the skillet tightly and bake for 30 minutes.

  5. 5

Uncover and bake or broil for another 2 minutes until the vegan cheese is melted and golden. If there is excess liquid, simmer briefly on the stove.

  6. 6

Garnish with fresh basil (1 handful) and chili flakes (1 pinch) before serving.
