Instructions

    Place the blanched almond flour (90 g) and powdered sugar (70 g) into a food processor and pulse briefly to combine.

    Add the water (20 ml), almond extract (0.25 tsp), and rose water (0.5 tsp) to the processor. Pulse until the mixture clumps together to form a solid dough ball.

    Remove the dough and knead on a clean surface for 0.5 minutes. If it is too dry, add a few more drops of liquid; if too sticky, add a little more almond flour.

    Roll the marzipan into a log, wrap tightly in cling film, and refrigerate to allow it to firm up.
