
Herby Garlic Cream Cheese
This savoury vegan cream cheese alternative is crafted from a protein-rich blend of tofu and cashews. Infused with a trio of fresh chives, dill, and basil, it offers a silky texture and vibrant herb-forward profile. Perfectly tangy and satisfying, it is an excellent healthy spread for morning bagels or afternoon snacks.

Place the raw cashews (0.75 cup) in a heat-proof bowl and soak in boiling water for at least 1 hour or overnight.

Drain the cashews and add them to a food processor along with the firm tofu (11 oz), garlic cloves (2 clove), juice of lemon (0.5), apple cider vinegar (1 tbsp), garlic powder (2 tsp), onion powder (2 tsp), salt (1 tsp), and ground black pepper (0.5 tsp). Blend until perfectly smooth.

Transfer the mixture to a bowl and fold in the fresh chives (0.33 cup), fresh dill (0.33 cup), and fresh basil (0.25 cup).

Optionally, place the spread in the fridge for an hour to set and allow the flavours to meld.
