
Golden Cauliflower Dhal
This comforting vegan dhal is a vibrant bowl of plant-based goodness, combining earthy red lentils with golden spices and creamy coconut milk. Infused with aromatic cardamom and cloves, and bulked out with tender cauliflower and crisp Brussels sprouts, it offers a nourishing meal that is under 600 calories.

Finely shred brussels sprouts (50 g) and halve the remaining brussels sprouts (100 g). Heat rapeseed oil (2 tsp) in a saucepan and stir-fry the halved sprouts for 3 minutes.

Stir in ginger (0.5 tbsp), red lentils (100 g), cherry tomatoes (75 g), cauliflower (200 g), paprika (0.5 tsp), and cumin (1 tsp). Add vegetable stock (300 ml), cardamom pods (2), and whole cloves (2 clove). Bring to a boil and simmer for 15 minutes.

Add coconut milk (100 ml) and the shredded sprouts. Simmer for 5 minutes. Remove the cardamom and cloves, then serve with lemon (0.5 wedge) squeezed over.
