Instructions

    In a high-powered blender, combine the garlic (2 clove), chili powder (2 tbsp), paprika (2 tsp), peppers in adobo (2 chipotle), pineapple juice (0.5 cup), white vinegar (0.25 cup), and fresh pineapple chunks (1 cup). Blend until smooth and set aside.

    Heat olive oil (2 tbsp) in a large skillet over medium-high heat. Sauté the cauliflower (1 head) and onion (0.5 sweet) until the cauliflower is tender and onions are caramelized, about 12 to 15 minutes.

    Reduce heat to low. Stir in the pineapple sauce, the remaining fresh pineapple chunks (1 cup), and the jalapeno (1). Simmer for 8 to 10 minutes until the sauce coats the cauliflower.
